PEA SOUP

Ingredients
Main
- 4 kg Ham beef, smoked pork
- 3 ltrs Water
- 5 ea medium size onions
- 500 grams bacon smoked, thick slices
- 2 kg Greens peas dried, split
- 1 kg Yellow peas dried, split
- 4 ea beef cubes or chicken cubes or stock
Seasoning
- 2 tsp white pepper ground
- 2 tsp black pepper coarse
- 2 tbsp curry powder BE GENEROUS
- 2 tsp cumin ground
- 2 tsp tumeric ground
- 1 tsp garlic powder
- 4 tbsp soy sauce thick use "light" at your own perril
- 1 ea salt to taste may NOT need additional salt!
Instructions
- BOIL the meats (WITH BONE!) in 3 litres (3 quarts) of water for about 2 hours. Add water if required.
- CHOP onions & bacon AND fry together until brown – set aside
- REMOVE meats from water – RESERVE water
- Chop meats and set aside (include all drippings, fats, liquids!)
- ADD peas to water, bring to boil for about 15 minutes
- ADD chopped meats and onion/bacon mix (include bacon fat and de-glaze the pan!).
- DISSOLVE beef cubes in 1 litre (1 quart) of hot water and add to pot.
- THEN simmer for at least 3 HOURS. Add more water as required.
- SEASON to taste: You maybe creative and use what you have/like
- Bon appetite!
Notes
This soup is great for a party or large group. However, I like to make a large pot and then freeze portions for later use. While I am not into “microwave cooking”, THIS does very well when reheated from the freezer.
